The Unique High-Altitude Vineyard

  • Elevation & Climate: The vineyard is situated at over 200m (650 ft) above sea level on a cool site facing the majestic Pyrenees. The combination of cool nights and warm summers provides the perfect temperature range for a slow, healthy maturation, ensuring the Chardonnay grapes achieve optimal balance.

  • Soil: The vines thrive in a classic Clay-limestone soil composed of fine gravel, which contributes structure and minerality to the finished wine.

The dedication to quality is evident in the meticulous winemaking process:

  1. Night Harvest: Grapes are picked at night to preserve their full quality potential and maintain freshness.

  2. Gentle Pressing: Only the first press juice is collected after de-stemming, ensuring the best acid/fat balance in the must.

  3. Fermentation: After a light settling, the wine ferments for approximately twenty days.

  4. Maturation: The wine is aged entirely in 100% stainless steel vats and benefits from two months of aging on its fine lees with bĂątonnage (stirring). This technique enhances the wine's texture and complexity without introducing oak.
